Nettles Walnut Pesto from Herbalist Tania

Tania's Nettle Pesto

This nettle pesto combines the rich, earthy flavor of nettles with the nuttiness of walnuts and the brightness of lemon zest. Enjoy experimenting with this unique twist on traditional pesto! Serve over pasta, spread it on bread, or use it as a flavorful sauce for grilled vegetables.

Ingredients

  • 2 cups fresh nettle leaves (make sure to use gloves when handling)
  • 1/2 cup walnuts, toasted
  • 1/2 cup parmesan cheese, grated or *Vegan Parmesan
  • 2 cloves of garlic, minced
  • Zest of 1 lemon
  • Juice of half a lemon
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste

What you will need

  • Medium Skillet
  • Food Processor
  • Grater
  • Mincer
  • Zester
  • Serving Bowl, Storage Jar, Serving Spoon

HOW TO

Toast the Walnuts: In a dry skillet over medium heat, toast the walnuts until they are fragrant and lightly browned. Set aside to cool.

Prepare the Pesto: In a food processor, combine the nettles, toasted walnuts, grated Parmesan, minced garlic, lemon zest, and lemon juice. Pulse the ingredients until coarsely chopped.

Stream in the Olive Oil: With the food processor running, slowly stream in the olive oil until the pesto reaches your desired consistency. Add salt and pepper to taste.

Adjust and Serve: Taste the pesto and adjust the seasoning or lemon juice if needed. Spoon the nettle pesto into a jar or bowl.
