Elles Lavender Buttercream Lemon Cupcakes

Indulge your senses in a delightful symphony of flavors with Elle’s CBG Lavender Buttercream Lemon Cupcakes. This enchanting recipe seamlessly combines the zesty brightness of fresh lemons with the floral elegance of lavender.

For Cupcakes

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • dash of salt
  • zest from 4 lemons
  • 1/2 cup ( 1 stick) butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 egg whites
  • 1 tsp vanilla
  • 1/2 cup milk
  • 1/4 cup lemon juice

For Frosting

  • 1g of your choice of RSO (We used the CBG-fortified 2:1 from Farmers Friend Extracts)
  • 3/4 cup ( 1 1/2 sticks) butter, softened
  • 1 tsp lavender extract
  • 3 1/2 cups powdered sugar
  • 1-2 TBSP milk
  • Purple food coloring, optional (we used blue and red until we found the right shade)
  • Culinary dried lavender, optional, for garnish

HOW TO

Preheat oven to 350 degrees.

Grease a mini muffin pan or line with cupcake liners.

In a bowl, whisk together flour, salt and baking powder. Set aside.

In a mixing bowl, beat butter and sugar until fluffy. Add in egg and egg whites, then, vanilla and lemon zest.

Gradually, add in flour mixture, milk and lemon juice. Alternating between the three. Beat until fully combined.

Divide batter evenly into pan. Bake 12-15 minutes or until toothpick inserted comes out clean. Cool completely before frosting.

FOR FROSTING:

Infuse butter with desired extract on a low heat and add 1-2 tsp lavender.
Cool until solid.

Once cooled, beat infused butter until fluffy. Gradually, add in powdered sugar and beat until fluffy.

Add in food coloring and milk. Adding/subtracting milk to achieve desired consistency.

Frost on cooled cupcakes. If desired, garnish with dried lavender or sprinkles before serving.

Dosing Guide

Only use as much of the syringe as needed for your desired dosage.

Once you have frosted all of your cupcakes divide the how many mg of extract you infused with by how many cupcakes you made.

Because we used the entire syringe of 500mgTHC and 200mg CBG, and we ended with 48 cupcakes: each cupcake should be 10.5mg THC and about 4mg CBG.

TIP: Use all frosting while frosting cupcakes before doing your math so you know exactly how many cupcakes to divide by. Make sure to frost evenly for consistent dosing.

If you were to infuse your frosting with only half of the syringe you could make a lower dosage serving size. In this way you can even make microdoses by using only an 1/8th or 1/4 of the syringe or less.

Always consult your guests about their dosage requirements and inform them as to how many mg they are consuming. If your guest is more sensitive you can choose to add a smaller amount of RSO or double the other ingredients to make a larger and less potent batch.

Per OLCC research: The average psycho-active threshold is 5mg, some people need less, some people need more.

Always start low and add slowly, remembering to wait at least 1.5 hours after eating an edible before consuming more as it takes time for your body to digest the cannabis and feel the effects.
